Stir-fry everything together
Sauté minced garlic in oil until fragrant, add rice and water, cook until fluffy.
Slice onions and tomatoes into ½-inch wedges; keep separate.
Cook to your preferred texture; set aside.
Sauté onions for 3–5 minutes, add steak and fries back, add soy sauce and ají amarillo; toss for 1–2 minutes.
Fold gently until slightly softened (juicy, not mushy).
Top with cilantro, serve hot with garlic rice.
