Welcome to Everybody Eats Vegan. This blog has been on my heart for years—a place to share my story, my roots, and the food that shaped me. After countless moments of doubt and dreaming, I finally found the courage to bring it to life.

I was born and raised in New York, the child of Salvadoran immigrants. In our home, food was never just about feeding ourselves—it was about holding each other up. It was about survival, love, and togetherness. We didn't have much, but we always had each other, and we always made sure everybody ate.

As I reached the end of high school, I often asked myself, what's next? Culinary school was a dream, but life had other plans. I studied business and communication, took on odd jobs, and wandered a bit. It wasn't until my final year at University that something clicked—I found myself in the kitchen again, reconnecting with the joy of cooking.

That year, I transitioned to a vegan lifestyle, and it completely transformed the way I saw food. I started recreating the meals I grew up on—the dishes my family made every holiday, the street food of my neighborhood, the comfort food that got me through hard days—but all plant-based.

This blog is my way of bringing those stories and flavors to you. You'll find recipes that are simple, nostalgic, and full of heart—perfect for your next family dinner or get-together with friends. I'll also share the vegan products I love and some fun, feel-good content along the way.
